The bread dough is fermented by this single celled fungi, converting its sugar into alcohol and carbon dioxide.The carbon dioxide fills the dough with bubbles thus making chewy airy loaf.Though alcohol is burned off in baking which lends the bread its rich flavour. The yeast grows by consuming the sugar it needs.


You may have a doubt,how these sugars are produced Right? These sugars are produced when water breaks down the starch in flour;thus a wetter,softer dough will ferment more quickly. Yeast also needs a warmth favouring temperature in the range of 85 F. The high temperature used for baking ,on the other hand ,kill yeast thus the loaf stop rising
